About

Door 19 is part of a big urban project called ArtKvartal that aims to remake a currently empty and post-industrial section of northeast central Moscow, by creating a new oasis of active urban life supported by the Government of Moscow.

The first wave of investment to this extensive project was Door 19 a pop-up bar and restaurant located in a 470 sq. meters penthouse of the first building of the project called ArtHouse.

During 6 weeks different chefs from all over the world were invited to cook by turn in this amazing pop-up space combining gastronomy, mixology, design, music and arts.

The menu we presented during our one week guest-visit in this extraordinary project was created and related to some of the happy memories and moment we had experienced during the last years.

First course was based on some of the classic Nordic flavors and ingredients we both know so well from our time spend in Denmark but presented as a small sushi/sashimi board.

Second course was inspired by flavors coming to Sebastian’s mind when dreaming about Japan combined with techniques from some of the dishes he created for 41° and Pakta.

Third course was a version of the main course served on a beautiful summer day in Cadaqués back in 2013 when Sebastian was cooking a very special meal - the wedding dinner of our very great friends Matt and Laura Goulding.

Fourth course/dessert was inspired on memories and flavors from Sicily where we spend our very first holidays together.

Sushi goes Nordic

Marinated salmon infused with beetroot, burned cucumber, pickled beetroot, dill and horseradish

Japanese illusions

Leeks with charcoal grilled aubergine pure, ginger-yuzu gel, puffed buckwheat and miso foam

A Happy Marriage

Beef tenderloin with mustard and herbs crust, baked Jerusalem artichoke and pinenut-raisins vinaigrette

Memories of Sicily

70 % Chocolate ganache with caramelized pistachios, rosemary marinated oranges and olive oil caviar
