Sabi Sushi is a chain of sushi restaurants located in and around Stavanger in Southwest Norway. The first restaurant opened its doors in 2011 and today Sabi Sushi counts a total of 8 restaurants.
During our one week stay in Norway, Njål Gaute Solland, who is the founder and co-owner of Sabi Sushi, showed us around the region and introduced us to small local producers.
First part of our visit to Sabi Sushi consisted in a 2 days practical and theoretical course about Nikkei cuisine. During these 2 days we practiced special techniques and recipes and shared our knowledge about Nikkei cuisine with the sushi chefs.
Second part of our visit consisted in a guest chef event, called Sabi Sushi Dinner Club, where we presented a special nikkei menu prepared together with the Sabi sushi chefs.
The Dinner club took place over three nights where we presented a 17 courses menu for 40 guests per night. Apart from special brought and imported ingredients the menu also included local Norwegian produce as delicious sea urchin, seaweed, different kinds of herbs and even Norwegian grown wasabi. All provided by some of the local farmers we had visited on the first days of our visit.
Sussie had prepared a special beverage paring including wine, sake, dry sherry and local Norwegian craft beer.
